Smashed Beef Tacos with Corn & Coriander Slaw and Guacamole

Created by Ev’s Foodie Diaries (@evsfoodiediaries), they combine crispy, seasoned beef tacos with creamy homemade guacamole and our fresh Salad Servers Corn & Coriander Slaw Salad for plenty of crunch and colour.
The beef cooks directly on the tortilla, making these smashed tacos quick to prepare and even easier to assemble. Load them up with slaw, guacamole, fresh tomato and coriander and you’ve got an easy family dinner that feels a little more exciting than your usual weeknight meal.
Smashed Beef Tacos with Corn & Coriander Slaw

INGREDIENTS
Smashed Beef Tacos
500g beef mince
1 tbsp paprika
1 tbsp cumin
2 tsp onion powder
2 tsp garlic powder
Salt and pepper
Small soft tacos
Olive oil
Guacamole
1 avocado
1 tbsp finely diced red onion
Juice of 1 lime
Toppings
Salad Servers Corn & Coriander Slaw Salad
Fresh coriander
Tomato, diced
METHOD
Smashed Beef Tacos
In a bowl, combine the beef mince, paprika, cumin, onion powder, garlic powder, salt and pepper. Mix until the seasonings are evenly distributed.
Take a small portion of the seasoned beef mixture and press it firmly onto one side of each soft taco, keeping the beef layer no more than 2cm thick.
Heat a drizzle of olive oil in a frying pan over medium-high heat.
Place the tacos beef-side down into the hot pan. Cook until the beef is cooked through and nicely browned.
Flip briefly to warm and lightly toast the tortilla, then remove from the pan.

Guacamole
Mash the avocado in a small bowl.
Add the finely diced red onion and lime juice and mix until combined.
To Assemble
Top each smashed beef taco with a generous spoonful of Salad Servers Corn & Coriander Slaw Salad.
Add the homemade guacamole, diced tomato and fresh coriander.
Fold, serve and dig in while they're warm.

RECIPE NOTES
Keep the beef layer thin: Pressing the mince evenly over the tortilla helps it cook quickly and gives you that delicious browned finish. Keep it to no more than 2cm thick.
Get your pan nice and hot: A properly heated pan will help brown the beef rather than steam it.
Prep your toppings first: Have the guacamole, tomato, coriander and Corn & Coriander Slaw ready before you start cooking. Once the tacos hit the pan, everything comes together quickly.
Make them your own: Add your favourite taco toppings or a squeeze of fresh lime just before serving.
Serving a crowd: Set all the toppings out on the table and let everyone load up their own tacos. Less work for the host and everyone gets exactly what they want.
