Evelyn’s Quick San Choy Bow w/ Glass Noodle & Asian Vegetable Salad

Easy San Choy Bow

Ingredients
- Olive oil
- 1 brown onion, diced
- 2 garlic cloves, finely chopped
- 500g pork mince
- 1 tsp sesame oil
- 1 tbsp Chinese cooking wine
- 1 tbsp soy sauce
- 1 tbsp oyster sauce
- Baby cos lettuce leaves (3–4 per person)
- 1 Salad Servers Glass Noodle & Asian Vegetable Salad, mixed
- ¼ cup peanuts, chopped and toasted
- 3 spring onions, finely chopped
- 1 red chilli, finely sliced
Method
- Heat a drizzle of olive oil in a large frying pan over medium heat.
- Add the onion and garlic and cook until softened and fragrant.
- Add the pork mince and cook until browned, breaking it up with a spoon as it cooks.
- Stir through the sesame oil, Chinese cooking wine, soy sauce and oyster sauce. Cook for another few minutes until absorbed.
- Arrange the baby cos lettuce leaves on a serving platter.
- Add a generous spoonful of the Glass Noodle & Asian Vegetable Salad to each lettuce cup.
- Share the pork mixture between the cups, then sprinkle with toasted peanuts, spring onion and sliced chilli.
- Serve immediately and enjoy.
