Packed with plant-based goodness, creamy dressing, crispy tofu and a zingy homemade tzatziki, this bowl is the definition of eat-the-rainbow energy.

What Tess Used in Her Bowl

Tess built her nourish bowl with a base of greens and grains, then layered on colour and crunch. Here’s what she used:
•    1 pack of Salad Servers Green Goddess Salad
•    1 avocado, sliced
•    2 big handfuls spinach leaves
•    A handful of fresh mint leaves
•    Toasted sesame seeds
•    Homemade tzatziki (coconut yoghurt base)
•    Crispy sesame tofu

It’s light yet satisfying, creamy but still fresh — and it looks as good as it tastes.

About Our Green Goddess Salad

Our Green Goddess is a cult favourite for a reason. It’s a herby, creamy, zesty mix of crunchy greens like kale, cabbage and silverbeet, tossed in a dreamy dressing of lemon juice, garlic, parmesan, anchovy and herbs. Designed to hold up to anything you throw it at — from BBQ mains to nourish bowls — this is one salad you’ll want to keep in the fridge on repeat.

Full Recipe (Serves 2)

Tzatziki
•    1 cup coconut yoghurt
•    1 small cucumber, grated & squeezed
•    Juice of 1 lemon (2–3 tbsp)
•    1 clove garlic, minced
•    1 tbsp chopped dill
•    1 tbsp chopped mint
•    ½ tbsp olive oil
•    Salt and pepper to taste
→ Mix all ingredients in a bowl.


Crispy Sesame Tofu
•    300g extra firm tofu (pressed & sliced)
•    ½ cup panko breadcrumbs
•    1½ tbsp sesame seeds
•    20ml soy sauce
•    15ml maple syrup
•    7.5ml mirin or rice vinegar

→ Marinate tofu in soy, maple, and mirin. Coat with breadcrumbs, sesame seeds, salt & pepper. Pan-fry until golden, then slice.

To Serve
Layer tzatziki in the base of the bowl, followed by spinach, Green Goddess Salad, avocado, tofu strips, fresh mint and sesame seeds. Enjoy!
